Chicken With Orange and Garlic

 

Garlic and orange juice help to flavor this light and easy chicken. Serve these chicken breasts with rice and a salad for an easy everyday meal.


Ingredients:

  • 4 chicken breast halves, without skin
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 2 green onions, thinly sliced
  • 8 cloves garlic, crushed and minced
  • 1/4 cup fat-free chicken broth
  • 1/4 cup orange juice
  • dash hot sauce, such as Tabasco
  • 2 tablespoons fresh minced parsley

Preparation:

Wash chicken and pat dry. Pound chicken breasts gently to thin slightly. Sprinkle chicken with salt. Heat olive oil in a large skillet over medium-low heat. Add green onion and sauté for 1 minute. Add garlic and chicken; sauté for 5 minutes, or until chicken is browned. Turn, add garlic, and sauté for 5 minutes longer. Remove chicken and set aside. Add chicken broth, orange juice, and hot sauce to the skillet. Bring to a boil and boil, uncovered, for 5 minutes to reduce slightly. Reduce heat, add chicken back to the skillet, cover, and simmer over low heat for 15 to 20 minutes longer.
Serves 4.
