Ingredients:
- 4 chicken breast halves, without skin
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 2 green onions, thinly sliced
- 8 cloves garlic, crushed and minced
- 1/4 cup fat-free chicken broth
- 1/4 cup orange juice
- dash hot sauce, such as Tabasco
- 2 tablespoons fresh minced parsley
Preparation:
Wash chicken and pat dry. Pound chicken breasts gently to thin slightly. Sprinkle chicken with salt. Heat olive oil in a large skillet over medium-low heat. Add green onion and sauté for 1 minute. Add garlic and chicken; sauté for 5 minutes, or until chicken is browned. Turn, add garlic, and sauté for 5 minutes longer. Remove chicken and set aside. Add chicken broth, orange juice, and hot sauce to the skillet. Bring to a boil and boil, uncovered, for 5 minutes to reduce slightly. Reduce heat, add chicken back to the skillet, cover, and simmer over low heat for 15 to 20 minutes longer.Serves 4.
